Fried Rice with Broccoli and Tofu / Arroz Chino con Brócoli y Tofu
This is what I made for dinner this evening. I was home earlier in the day, so I baked the tofu while home and left the rice cooking while I went to pick them up from school. Today, I also added some cooked frozen corn. It adds a nice contrast to the soy sauce.
Fried Rice with Broccoli and Tofu 1. Cook (I use a rice cooker): 3 cups water 1 cup brown rice 2. Steam 2 bags of broccoli with 1-2 teaspoons garlic powder and salt to taste. 3. Microwave 1 cup of grated carrots in a small amount of water - 2 minutes or so. 4. Cut 1 box of tofu in ½” cubes and place on cookie sheet sprayed with Pam. Bake for 20 minutes @ 350 degrees F. Turn after 10 minutes. 5. Spray a large pan with Pam. Sauté 1 chopped onion in a small amount of oil. Add cooked broccoli, cooked carrots and tofu and continue to sauté. Add small amounts of water to prevent from sticking. Add cooked brown rice and mix well. Heat thoroughly. 6. Add soy sauce, mix thoroughly and serve. 6. Rociar salsa soya sobre todo y servir. |
